Takayuki Shibata is a master sharpener in Takefu, Echizen, famous for his edges – and the founder of Masakage. His Koutetsu series comes in Aogami Super carbon steel and SG2 powder stainless, with a clean migaki finish and very thin geometry that cuts with little effort.
